Ingredients
- Peeled Cooked Shrimp 15 oz
- Morels 5 oz
- Garlic 5 cloves
- Onion 2 heads
- Grated Ginger Root to taste
- Citrus Zest Mix 1 piece
- Chicken Broth 1½ l
- Mild Chili Spice 2 pieces
- Coconut Milk 5 fl oz
- Sugar 1 tablespoon
- Vegetable Oil 4 spoons
- Meyer Lemon Juice 2 spoons
Step-by-Step Guide
Step 1
Peel and finely chop the garlic and onion. Slice the pepper into rings. Heat vegetable oil in a skillet and sauté the garlic, onion, and pepper in turn. Then, mix everything together, blend it with an immersion blender, and lightly brown it in the same skillet.
Step 2
Grate the lemon zest and ginger root. Add them to the mixture along with the lemon juice and sugar. Sauté lightly and remove from heat.
Step 3
Clean and slice the mushrooms. In a large pot, bring the broth to a boil, then add coconut milk or cream along with 3 tablespoons of the prepared paste. Cook for 2 minutes over medium heat.
Step 4
Add the mushrooms and shrimp to the soup and cook for another 5 minutes. Garnish with fresh herbs.
