Tiropita (Greek Pie with Feta and Greens)
Ingredients
- Unleavened dough 20 oz
- Onion 1 head
- Feta cheese 10 oz
- Garlic 3 cloves
- Mild Chili Spice 3 pieces
- Parsley 1 bunch
- Chopped Green Onions 1 bunch
- Dill 1 bunch
- Cream 22% 0 fl oz
- Chicken Egg 2 pieces
- Whole egg 1 piece
- Toasted Sesame 0 oz
Step-by-Step Guide
Step 1
First, take 2 sheets of pastry (one package usually contains 500 grams — which is typically 2 sheets) and roll them out on a floured surface. Adjust the size to fit the baking dish you will use.
Step 2
Place the rolled-out sheets in a preheated oven at 390°F for 10 minutes (the pastry should rise about 5–6 cm).
Step 3
While the pastry is in the oven, chop the onion, garlic, and chili pepper. Sauté everything together until the onion turns golden.
Step 4
Roughly chop the greens (cilantro, parsley, dill — whatever you prefer).

Then combine the greens with the sautéed vegetables. Mix well.
Step 6
Add pieces of feta cheese (it's better to break it into small parts by hand), cream, and two eggs to the mixture. Stir well.
Step 7
When the pastry has increased in volume, take it out of the oven and divide each sheet into 2 parts. You should have 4 sheets.
Step 8
In a baking dish (line it with parchment paper and lightly grease it with oil), place the first sheet of pastry. On top, spread a third of the cheese-vegetable mixture.
Step 9
Then place the second sheet on top and repeat the process with the mixture; do this one more time. Brush the last, fourth layer with egg yolk, sprinkle with sesame seeds, and place it in the oven preheated to 355°F for 20 minutes.
Step 10
Once the pie is ready, take it out, let it cool slightly, and cut it into small portions.
