Tiramisu with Mascarpone and Amaretti

Ingredients

  • Mascarpone Cheese Unagrande 10 oz
  • Farm fresh eggs 3 pieces
  • Instant coffee 1 cup
  • Cocoa Powder to taste
  • Amaretto Liqueur 2 tablespoons
  • Brown Sugar 5 tablespoons
  • Amaretti 36 pieces

Step-by-Step Guide

Step 1

Brew strong coffee, add a teaspoon of liqueur, and let it cool.

Step 2

Separate the egg whites from the yolks, beat the yolks with a tablespoon of sugar over a water bath until the sugar is completely dissolved. Add a teaspoon of liqueur and continue beating for a couple more minutes until smooth. Remove from heat and beat for another couple of minutes until the cream cools. Gently fold in the lightly whipped mascarpone until smooth.

Step 3

In a separate bowl, beat the room temperature egg whites with a pinch of salt until foamy, then gradually add the remaining sugar and beat until stiff peaks form with a light cream color. Fold the whipped egg whites into the cheese mixture one spoonful at a time, gently combining both mixtures.

Step 4

Line the bottom of serving dishes with amaretti soaked in coffee and brandy, then cover with a layer of cream, and sift cocoa on top through a sieve. Build a second layer of the dessert in the same way and refrigerate all serving dishes for at least three hours before serving.
