Ingredients

- 33% Cream 10 fl oz
- Powdered Sugar 0 oz
- Savoiardi Cookies 5 oz
- Cocoa Powder 0 oz
Step-by-Step Guide
Step 1
Brew strong coffee using 50 grams of coffee and 350 ml of water, then let it cool. Once cooled, add rum or cognac to the coffee. In a separate bowl, combine the egg yolks with sugar and whisk them over a double boiler until they become light and thick. Remove from heat and continue whisking until the mixture cools down.
Step 2
Mash the mascarpone cream cheese and add the egg yolks. Mix until smooth.
Step 3
Whip very cold heavy cream with powdered sugar until you achieve a thick, stable consistency.
Step 4
Combine the cream with the egg and cheese mixture, using gentle folding motions from the bottom up.
Step 5
In a suitable mold with a height of 8–10 cm, layer a cream that is 1.5–2 cm thick.
Step 6
Quickly dip the ladyfingers in cold coffee on both sides and arrange them in the dish over the cream.
Step 7
Place the tiramisu in the refrigerator for 4–5 hours or overnight to allow it to soak through. Serve chilled.
