Tiramisu with Alcoholic Cream
Ingredients
- Chicken Egg 6 pieces
- Sugar 5 oz
- Dry White Wine 2 tablespoons
- Ground Coffee 5 oz
- Mascarpone Cheese Unagrande 20 oz
- Rum 1 tablespoon
- Savoiardi Cookies 48 pieces
- Liquid dark chocolate 5 oz
Step-by-Step Guide
Step 1
Separate the yolks from the whites. Place the whites in the refrigerator.
Step 2
Beat 200 g of sugar with the yolks. Add the wine. The sugar should completely dissolve.
Step 3
Add 500 g of mascarpone to the mixture and stir until smooth.
Step 4
Whip the cold egg whites with a pinch of salt until stiff peaks form. Fold into the cream.
Step 5
Cool the strong coffee, add rum, and optionally one or two tablespoons of sweet syrup (for example, from canned peaches).
Step 6
Lay the savoiardi cookies in a single layer in a dish. Using a teaspoon, carefully drizzle each cookie with coffee (2 teaspoons of coffee per cookie). If dipped, the cookie will fall apart. Top with a layer of cream.
Step 7
Add a second layer of cookies on top of the cream. Drizzle the cookies with coffee. Top with a second layer of cream.
Step 8
Refrigerate overnight. Grate dark chocolate on top or sprinkle with bitter cocoa.
