  • Baking Powder 0 oz
  • Sugar 5 oz
  • Butter 5 oz
  • Milk 5 fl oz
  • Ground Coffee 0 oz
  • Mascarpone Cheese Unagrande 5 oz
  • Wheat Flour 5 oz
  • Farm fresh eggs 3 pieces
  • 10% cream 0 fl oz
  • Powdered Sugar 5 oz

Step-by-Step Guide

Step 1

Mix flour, sugar, baking powder, and melted butter.

Step 2

In a separate bowl, beat the egg whites with milk using a mixer for 1–2 minutes.

Step 3

Combine the milk and egg mixture with the flour mixture. Beat with a mixer. The batter should not be too liquid, it should have the consistency of very thick sour cream.

Step 4

Pour the batter into cupcake molds (do not fill the molds completely, as the batter will rise) and place in a preheated oven at 355°F. Bake for 25 minutes.

Step 5

For the cream, whip the cream, mascarpone, and powdered sugar.

Step 6

Brew the coffee (you can use instant coffee - dissolve 1 teaspoon of coffee in one tablespoon of warm water), and add it to the cream.

Step 7

Beat everything together once more.

Step 8

Let it cool while the cupcakes are baking. The cream should not be liquid.

Step 9

Once the cupcakes are baked, cover them with the cream and sprinkle with cinnamon.
