Ingredients

  • Farm fresh eggs 6 pieces
  • Sugar 10 oz
  • Wheat Flour 5 oz
  • Vanilla salt 0 oz
  • Baking Powder 0 oz
  • Mascarpone Cheese Unagrande 20 oz
  • 10% cream 15 fl oz
  • Powdered Sugar 5 oz
  • Liquid dark chocolate 5 oz
  • Butter 0 oz
  • Amaretto Liqueur to taste

Step-by-Step Guide

Step 1

Beat the eggs with sugar until pale, add vanilla sugar and sifted flour mixed with baking powder. Continue beating for another 5-7 minutes. The surface should have many bubbles.

Step 2

Divide the batter into two small pans. Line the bottom of the pan with a circle of parchment paper to make it easier to remove the finished sponge cake.

Step 3

Bake the sponge cake at 170-355°F for about 25 minutes. Check readiness with a wooden skewer. Remove the finished sponge cakes from the pan and cool on a rack. Cut each sponge cake in half.

Step 4

For the cream, whip the cream.

Step 5

Thoroughly mix the cream cheese with powdered sugar (this can be done with a spoon).

Step 6

Add the whipped cream to the cheese mixture and gently fold until homogeneous. I always do this by hand with a spoon, and the cream turns out very delicate and airy.

Step 7

Brew strong coffee and add a little liqueur.

Step 8

Soak each cake layer in coffee and spread a layer of cream on top (the layer should not be thin!).

Step 9

Assemble the cake: it's easier to assemble the cake in a frame; it will be more even.

Step 10

Add the whipped cream to the cheese mixture and gently fold until homogeneous. I always do this by hand with a spoon, and the cream turns out very delicate and airy.

Step 11

Brew strong coffee and add a little liqueur.

Soak each cake layer in coffee and spread a layer of cream on top (the layer should not be thin!).

Assemble the cake: it's easier to assemble the cake in a frame; it will be more even.

Step 14

It's best to refrigerate the cake for several hours to let it soak. Overnight is even better - it will taste more delicious! Then remove the frame and decorate the cake. You can spread cream on top and sprinkle with cocoa or decorate with grated chocolate or chocolate ganache.
