Description

This is a thick, spicy soup with a consistency similar to a stew, popular in the state of Louisiana. It's a very convenient recipe, as any leftover meat will work for this dish, especially smoked meat.

Ingredients

  • Butter 6 tablespoons
  • Onion 2 heads
  • Orange Bell Peppers 2 pieces
  • Celery salt 1 stalk
  • Ground Dried Garlic 1 teaspoon
  • Salt to taste
  • Ground Black Pepper to taste
  • Beef 5 lbs
  • Baking Tomatoes 2 cans
  • Chicken Broth 3 cups
  • Okra 10 oz
  • Chili Flakes 2 teaspoons
  • Worcestershire Sauce 3 tablespoons
  • Frank's Hot Sauce 1 tablespoon

Step-by-Step Guide

Step 1

Chop the onion, bell pepper, and celery. In a large pot, melt the butter over medium heat. Sauté the onion, bell pepper, and celery until they become soft. Then add the ground garlic, seasoning with salt and pepper.

Step 2

Increase the heat, pour in 1 cup of water, and add the meat (any leftover meat will work for the soup; you might have some grilled meat prepared with barbecue sauce).

Step 3

Next, add the crushed canned tomatoes and chicken broth. Bring to a boil, reduce the heat, and simmer for about 30 minutes until the meat is tender. Add the okra, red pepper flakes, Worcestershire sauce, and 1 tablespoon of hot sauce (you can add more if you like it spicy).

Step 4

Continue cooking for about 15 minutes until the soup thickens. Serve with rice and flatbread. Enjoy your meal!
