Description

Thick Chicken Soup with Sour Cream (Lyvja)

Ingredients

  • Poultry 5 lbs
  • Salad Potatoes 6 pieces
  • Onion 3 pieces
  • Garlic 5 cloves
  • Thyme to taste
  • Butter 5 oz
  • Wheat Flour 2 tablespoons
  • Salt to taste
  • Sour Cream 1 jar

Step-by-Step Guide

Step 1

The first three processes usually happen simultaneously. Cut the chicken into manageable pieces (I usually set aside the breasts for a second dish), place it in a 5-liter pot, cover with cold water, and boil until cooked. Once the chicken is ready, transfer it to a bowl, season with salt, sprinkle with finely chopped garlic (2-3 cloves), and let it sit covered to absorb the flavors. Strain the broth and keep it on low heat.

Step 2

In another pot, boil the diced potatoes. Once cooked, drain the water and mash the potatoes into a puree. You can add a bit of broth if desired.

Step 3

In a skillet, sauté the onions in butter. No golden colors or browning. Cook on low heat until translucent. If you want a thicker soup, you can add a couple of tablespoons of flour. In this case, add it to the onions, mix, and cook until lightly golden.

Step 4

In the pot with the gently boiling broth, add the mashed potatoes, cooked onions, sour cream, salt, spices, and squeeze (or finely chop) the remaining garlic. You can transfer the chicken there as well, or serve it separately in the soup. Enjoy your meal!
