- Chicken Broth 2 cups
- Coconut Milk 15 fl oz
- Lime Juice 1 tablespoon
- Cilantro to taste
- Lemongrass ½ cup
Step-by-Step Guide
Step 1
Place the chicken breast in a pot and cover with broth. Add coconut milk and lemongrass, bring to a boil, reduce heat, and simmer for 15-20 minutes until the chicken is cooked through.
Step 2
Transfer the chicken to a cutting board and cut into small pieces.
Step 3
Strain the broth through a sieve and return it to the pot. Add the chicken, lime juice, and chopped cilantro.
