Chicken bones can be replaced with meat or fish.

Ingredients

  • Water 2¼ liters
  • Chicken bones 20 oz
  • Onion 2 heads
  • Celery salt 2 stalks
  • Ground coriander 2 stalks
  • Banana Leaves 4 pieces
  • Salt to taste
  • Grated Ginger Root 1 tablespoon
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Cut the celery into small pieces, quarter the onions, and finely chop the coriander root and ginger root. Place all ingredients in a large pot, bring to a boil, keep on high heat for a few minutes, reduce the heat, and skim the foam from the broth. Cover with a lid and let the liquid simmer for about an hour.

Step 2

Strain several times through a fine sieve if necessary to obtain the clearest broth possible. Cool and skim the foam from the surface again. The broth can be stored in the refrigerator for a few days or frozen for longer storage.
