Tender creamy mushroom soup
Ingredients
- Butter 0 oz
- Fresh Mushrooms 20 oz
- Wheat Flour 2 tablespoons
- Onion 2 pieces
- Chicken Broth 20 fl oz
- 10% cream 5 fl oz
- Salt to taste
- Ground Black Pepper to taste
- Vegetable Oil 2 tablespoons
Step-by-Step Guide
Step 1
Finely chop the onion. Slice the mushrooms. In a heavy-bottomed pot, heat 2 tablespoons of vegetable oil. Add the onion and sauté, stirring, for about 3-4 minutes. Add the mushrooms and cook until soft for another 5-7 minutes.
Step 2
In another pot, melt the butter, stir in the flour, and sauté for 1.5-2 minutes. Then gradually, while constantly stirring, pour in the broth and bring it to a boil. Add the mushrooms and onion, mix, and bring to a boil again. Blend with an immersion blender. Add salt, pepper, and other seasonings to taste, and keep the soup on low heat for another 7 minutes. Then pour in the cream, bring to a boil again, and remove from heat. Serve with croutons, nuts, or chopped hard-boiled eggs.
