Ingredients

  • Quinoa 1 cup
  • Cucumber 1 piece
  • Arugula 1 bunch
  • Sesame Seeds 1 teaspoon
  • Dried Nori Seaweed 6 pieces
  • Bell pepper 1 piece
  • Soy Sauce 4 tablespoons

Step-by-Step Guide

Step 1

Cut the nori sheets in half, wash the vegetables and arugula, and slice the cucumber and bell pepper into long wedges.

Step 2

Prepare the quinoa: add it to boiling water and cook on low heat covered for about 15 minutes. Remove from heat and let it sit covered for 5 minutes. Then uncover, fluff with a fork. Let it cool, add soy sauce, and mix well.

Step 3

Before you start, make sure your hands are dry, as wet hands will make the nori soggy. Place half a sheet of nori shiny side down. Put a small amount of quinoa on the left side of the nori sheet, leaving the corners free.

Step 4

On top, place the arugula leaves, bell pepper, and cucumber. Arrange them vertically towards the top left corner.

Step 5

Take the nori sheet by the bottom left corner, lift it, and press it against the top edge.

Step 6

Continue rolling the temaki. Place a little quinoa on the bottom right edge to help seal it.

Step 7

Shape the temaki into a cone. Serve sprinkled with sesame seeds.
