Tartlets
Baking and Desserts • French
Description
Butter can be replaced with margarine or a mixture of both in equal amounts.
Ingredients
- Peanut Butter 2 teaspoons
- Water 5 fl oz
- Salt ½ teaspoon
- Butter 5 oz
- Egg white 1 piece
- Wheat Flour 10 oz
Step-by-Step Guide
Step 1
Sift the flour into a large bowl and mix it with the salt. Beat the egg with a fork and add it to the flour along with the butter or margarine — quickly mix the dough with your hands until it becomes crumbly. Gradually add the water and knead the dough until it is smooth and easily comes away from the sides of the bowl. Now roll the dough into a ball, cover it with a towel, and let it rest for half an hour in a cool place.
Step 2
Preheat the oven to 390°F and grease 20 tartlet molds — either boat-shaped or round, 4 cm in diameter.
Step 3
Dust the table with flour and roll out the dough to a thickness of 3 mm. Cut out circles with a glass or a special cutter, each 4 cm in diameter, and place them in the molds.
Step 4
Prick each tartlet with a fork, cover with parchment paper, and fill the molds with dry beans or chickpeas. This is done to prevent the baked tartlets from becoming soggy from the filling later. Bake for 15 minutes. Then remove the paper and beans and return the tartlets to the oven for another 5 minutes, until they are golden brown.
Step 5
Place the tartlets on a rack and let them cool. If you do not plan to use them immediately, store them in an airtight container to prevent them from drying out.
