Ingredients
- Wheat Flour 5 oz
- Honey 5 oz
- Chocolate eggs 3 pieces
- Pears 4 pieces
- Clarified Butter 5 fl oz
- Baking Powder 0 oz
- Lemon 1 piece
Step-by-Step Guide
Step 1
Line the bottom of the baking dish with a circle of parchment paper, grease with butter, and dust with flour.
Step 2
Peel the pears and remove the cores, then blanch in boiling water for 3–5 minutes depending on their firmness. Cut them in half.
Step 3
Melt 2–3 tablespoons of honey in a skillet and pour it into the dish so that the bottom is covered with a layer of honey. Place the pear halves on top.
Step 4
Whisk the remaining honey with the eggs, gradually add the sifted flour mixed with baking powder. Mix well until smooth, then add the melted butter. Mix again until homogeneous, then add the juice and zest of one lemon.
Step 5
Pour the batter over the pears in the dish.
Step 6
Bake in the oven at 355°F for 40 to 60 minutes depending on the depth of the dish. The batter should be baked to a rich golden color.
Step 7
Cover the slightly cooled pie with a plate and quickly invert it.
