Tapioca pudding with rum and raisins
Ingredients
- Dark rum 2 tablespoons
- Light Raisins, Seedless 0 oz
- Vanilla extract 1½ teaspoons
- Tapioca 3 tablespoons
- 1% Kefir 2½ cups
- Cream ½ cup
- Egg white 1 piece
- Brown Sugar ¼ cup
- Cinnamon 1 piece
Step-by-Step Guide
Step 1
In a small bowl, mix the rum, raisins, and vanilla extract.
Step 2
In a saucepan, combine the tapioca, milk, cream, egg, sugar, and cinnamon. Let sit for 5 minutes.
Step 3
Bring to a boil, reduce heat, and cook, stirring, for 20 minutes. Remove from heat and add the raisins with rum. Remove the cinnamon stick.
Step 4
Divide the pudding into serving dishes, cover with plastic wrap, and chill for 2 hours.
