Tangerine Crème Brûlée
Ingredients
- 10% cream 10 fl oz
- Citrus Zest Mix 3 tablespoons
- Vanilla extract 1 teaspoon
- Whole egg 1 piece
- Brown Sugar 0 oz
- Freshly squeezed orange juice 0 fl oz
- Sugar 0 oz
- Powdered Sugar 0 oz
Step-by-Step Guide
Step 1
Whisk the egg yolks with brown sugar and vanilla extract, then add the tangerine juice.
Step 2
Mix the cream with finely grated tangerine zest, heat almost to boiling, then slowly pour it into the yolk mixture while gently stirring.
Step 3
Pour the cream into jars or small molds.
Step 4
Place the jars in a deep baking tray, carefully fill the tray with hot water halfway up the jars, and place the tray in an oven preheated to 250°F for 60-70 minutes.
Step 5
Cool the finished crème brûlée and refrigerate for 'setting' for 3 hours.
Step 6
Before serving, caramelize the crème: sprinkle with a sugar mixture and place in a preheated oven on the 'broil' setting for 1-2 minutes.
