Description
Syllabub is a traditional dessert that combines whipped cream, sugar, and flavored liquid, usually wine or sherry. This delightful treat is often served chilled and can be enjoyed at any gathering or meal. The light and airy texture makes it a perfect end to a hearty dinner.
Ingredients
- Sugar 5 oz
- Sherry 5 fl oz
- Cognac 4 spoons
- Lemon 2 pieces
- Heavy cream 25 fl oz
- Ground Nutmeg a pinch
- Fresh Rose Hips 4 stalks
Step-by-Step Guide
Step 1
Thoroughly mix in a large bowl the oloroso sherry (which means 'fragrant' in Spanish; the flavor of this sherry is richer than regular sherry), sugar, brandy, two tablespoons of lemon juice, and the zest of one lemon (you will need a couple more pinches of zest for garnish later). Cover the bowl with a lid or wrap it in plastic wrap and leave it at room temperature for twelve hours or simply overnight.
Step 2
After that, add heavy cream and a pinch of nutmeg to the mixture and whisk with a hand whisk until soft, airy peaks form.
Step 3
Carefully spoon the prepared syllabub into small glass cups and before serving, garnish each portion with the remaining lemon zest and fresh rosemary leaves.
