- Farm fresh eggs 3 pieces
- Olive Oil 10 fl oz
- Sugar 10 oz
- Courgette 2 pieces
- Vanilla extract 0 fl oz
- Wheat Flour 15 oz
- Ground Cinnamon 0 fl oz
- Ground Nutmeg a pinch
- Baking Powder 0 fl oz
- Salt 0 fl oz
- Activated Baking Soda 0 fl oz
- Walnuts 0 oz
- Dried cranberries with sugar 5 oz
Step-by-Step Guide
Step 1
Preheat the oven to 355°F.
Step 2
Grease and lightly flour 2 small rectangular loaf or muffin pans.
Step 3
In a large bowl, beat the eggs and add the olive oil, sugar, grated zucchini, and vanilla.
Step 4
In another bowl, mix the flour, cinnamon, nutmeg, baking powder, baking soda, salt, and nuts (if using).
Step 5
Combine both mixtures and mix well. Divide the batter into the pans.
Step 6
Bake for about 60-70 minutes until cooked through and golden brown.
