Sweet Potato Soup with Maple Syrup
Ingredients
- Sweet Potato 25 oz
- Onion 1½ heads
- Leek 1 stalk
- Celery salt 2 stalks
- Garlic 1 clove
- Butter 2 spoons
- Cream 1½ glasses
- Chicken Broth 4 glasses
- Maple syrup 2 spoons
- Cinnamon 1 piece
- Ground Nutmeg ¼ spoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Place a large pot over medium heat and melt the butter in it. Add the chopped onion, and after 5 minutes, add the finely chopped celery stalks and leeks, cooking for another 5 minutes until the onion becomes translucent.
Step 2
Add the minced garlic to the pot, and after 2 minutes, add the diced sweet potato, pour in the chicken broth, toss in a cinnamon stick, and sprinkle with ground nutmeg.
Step 3
Bring the contents of the pot to a boil, then reduce the heat and simmer for 20 minutes.
Step 4
Remove the cinnamon stick from the pot. Transfer the soup to a blender, blend until smooth, and return it to the pot. Add the cream, maple syrup, season with salt and pepper to taste, stir well, and serve.
