Sweet Potato Soup with Chili and Gruyère

  • Onion 1 head
  • Mild Chili Spice 1 piece
  • Ground coriander 1 teaspoon
  • Garlic 2 cloves
  • Sweet Potato 25 oz
  • Gruyère cheese 5 oz
  • Chicken Broth 15 fl oz
  • Paprika a pinch
  • Butter to taste

Step-by-Step Guide

Step 1

In a pot, melt a piece of butter, add finely chopped onion, finely chopped chili, coriander, and minced garlic. Sauté for about 8 minutes until soft.

Step 2

Add the peeled and diced sweet potato and sauté for a few more minutes.

Step 3

Pour in the broth, bring to a boil, reduce the heat, and simmer for 10 minutes until the vegetables are tender. Season with salt and pepper.

Step 4

Blend the soup with an immersion blender until smooth, pour into bowls, and serve topped with grated cheese and a small amount of paprika.
