Sweet Potato Cream Soup with Thyme

Ingredients

  • Ground Black Pepper to taste
  • Garlic 2 heads
  • Olive Oil 4 tablespoons
  • Onion 1 head
  • Celery stalk 2 pieces
  • Mild Chili Spice 1 piece
  • Sweet Potato 5 lbs
  • Thyme 3 sprigs
  • Chicken Broth 0 qt
  • Salt to taste
  • 33% Cream 10 fl oz

Step-by-Step Guide

Step 1

Preheat the oven to 340°F. Cut the ends off the heads of garlic and mix with 1 tablespoon of olive oil. Wrap each head in a piece of foil. Place on a baking sheet and roast for about 1 hour until soft. Cool and squeeze the flesh of the garlic from each clove into a bowl.

Step 2

Meanwhile, in a pot, sauté the finely chopped onion, finely chopped celery, and minced small chili in olive oil until soft. Add the peeled and diced sweet potato and cook, stirring, for 10-15 minutes. Add the roasted garlic, thyme, and broth. Bring to a boil, season with salt, reduce the heat, and cook for 25 minutes.

Step 3

Remove the thyme sprigs and blend the soup in a blender until smooth. Pour into a clean pot. Add the cream, season with salt and pepper. Warm slightly and serve.
