Sweet pickled plums.
Ingredients
- Plums 20 oz
- Brown Sugar 5 oz
- Red Wine Vinegar 5 fl oz
- Star anise 1 piece
- Green peppercorns 1 tablespoon
- Allspice berries 4 pieces
- Bay leaf 2 pieces
- Salt ½ spoons
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Cut the plums in half and remove the pits.
Step 3
In a saucepan, combine the sugar and vinegar.
Step 4
Bring to a boil and cook, stirring, until the sugar is dissolved.
Step 5
Add star anise, both types of pepper, bay leaf, and salt. Bring to a boil.
Step 6
Add the plums, reduce the heat to low, and simmer for 3–5 minutes, until the plums are soft.
Step 7
Sterilize the jars for 15–20 minutes. Scald the lids with boiling water.
Step 8
Distribute the hot plums into sterilized jars.
Step 9
Pour in the marinade. Seal the lids.
Step 10
Store the sweet pickled plums in a cool, dark place for no more than a year. Serve with meat dishes.
