Sweet Pepper Soup
Ingredients
- Onion 2 heads
- Orange Bell Peppers 20 oz
- Tomatoes 4 pieces
- Chicken Broth 4 cups
- Egg white 2 pieces
- Chopped Sage Leaves 3 tablespoons
- Salt to taste
- Vegetable Oil 2 tablespoons
Step-by-Step Guide
Step 1
Roast the peppers, peel off the skin and seeds, and chop finely. Blanch the tomatoes in boiling water, remove the skin, and chop the flesh finely. Peel and finely chop the onion, then sauté in oil until golden, add the chopped tomatoes and peppers. Simmer over medium heat for 2 minutes.
Step 2
Bring the broth to a boil, add the sautéed vegetables, season with salt, and cook for 5 minutes at a gentle simmer. Remove from heat and stir in the beaten eggs.
Step 3
When serving, sprinkle with chopped herbs.
