Sweet matzo and cottage cheese pudding with pecan nuts and raisins
Ingredients
- Cottage cheese 15 oz
- Coarse matzo 3 pieces
- Sugar 7 tablespoons
- Chocolate eggs 3 pieces
- Ground Cinnamon ½ teaspoon
- Chopped almonds 0 oz
- Light Raisins, Seedless 0 oz
- Butter 0 oz
- Sour Cream to taste
Step-by-Step Guide
Step 1
Preheat the oven to 320°F.
Step 2
Soak the matzo in cold water for 1-2 minutes. Drain and place on a rack.
Step 3
In a bowl, mix the cottage cheese, eggs, 6 tablespoons of sugar, cinnamon, nuts, and raisins.
Step 4
Grease a pan with half of the butter and place 1 matzo. Spread half of the cottage cheese mixture, cover with another matzo, and spread with the cottage cheese mixture again. Top with the remaining matzo, grease with butter, and sprinkle with the remaining sugar.
Step 5
Bake the pudding for about 1 hour until golden brown. Cut and serve warm.
