  • Wheat Flour 30 oz
  • 3.2% Milk 5 fl oz
  • Butter 5 oz
  • Sugar 5 oz
  • Dry yeast 0 oz
  • Ground coriander ½ spoons
  • Cardamom ¼ spoons
  • Vanilla Pod 1 piece
  • Cognac 0 fl oz
  • Oranges 1 piece
  • Candied Lemon Peel 5 oz
  • Raisins 5 oz
  • Dried cranberries with sugar 0 oz
  • Pistachios 5 oz
  • Chicken Egg 2 pieces

Step-by-Step Guide

Step 1

Warm the milk together with the split vanilla pod and let it steep for about ten minutes, then add the yeast and let it sit for another ten minutes, until the milk starts to bubble slightly.

Step 2

In a mixer, cream the room temperature butter with the sugar until the mixture becomes light and pale in color. Then, add the cognac, orange zest, coriander, cardamom, and eggs to this mixture, and mix for another minute or two. After that, add the milk with vanilla and yeast, and once the milk is incorporated, gradually add the sifted flour. After two to three minutes of mixing the dough, fold in the finely chopped candied fruits, raisins, currants, and pine nuts.

Step 3

The dough, after all these disturbances, should remain sufficiently moist and stick to your hands. It needs to be transferred to a bowl, covered with a cloth, and placed in a warm spot, such as an oven set to a temperature of 40–120°F. Let it rest for three hours. It will rise, but not significantly in appearance.

Step 4

After three hours, preheat the oven (removing the dough if you had it inside) to 385°F. Transfer the dough to a baking pan, greasing it with a small amount of butter. Place the pan in the oven for forty-five minutes. Allow the bread to cool before serving it with sweet white wine.
