Sweet Cornbread with Buttermilk

Ingredients

  • Water 1 cup
  • Buttermilk 0.6 cups
  • Whipped Cream 0.3 cups
  • Sugar 2½ tablespoons
  • Honey ½ teaspoon
  • Coarse Salt ¼ teaspoon
  • Coarse Cornmeal 0.6 cups
  • Farm fresh eggs 2 pieces
  • Cream of tartar a pinch
  • Chili jam to taste

Step-by-Step Guide

Step 1

Grease 6 small molds with butter and lightly sprinkle with sugar.

Step 2

In a saucepan, combine water, buttermilk, cream, 2 tablespoons of sugar, honey, and salt. Bring to a boil, stirring constantly. Gradually add cornmeal, reduce heat, and cook for 2 minutes. Remove from heat and stir in the egg yolks.

Step 3

In a clean bowl, beat the egg whites with a pinch of cream of tartar until stiff peaks form. Fold into the batter. Divide the batter among the molds and place on a baking sheet.

Step 4

Preheat the oven to 375°F (375 degrees Fahrenheit). Bake the bread for about 22 minutes until done. Serve immediately with strawberry jam.
