Sweet Corn Pie

Ingredients

  • Poultry 1 piece
  • Onion 4 pieces
  • Ground meat 25 oz
  • Olive Oil 3 teaspoons
  • Dried Rosemary 1 teaspoon
  • Garlic 3 cloves
  • Salt 2 tablespoons
  • Ground Black Pepper to taste
  • Paprika 2 teaspoons
  • Black Cumin (Cumin) a pinch
  • Raisins ½ cup
  • Olives stuffed with lemon 10 pieces
  • Farm fresh eggs 4 pieces
  • Sweet Corn Sticks 12 cups
  • Cream 1 cup
  • Basil 5 pieces
  • Clarified Butter 2 tablespoons
  • Sugar 8 teaspoons

Step-by-Step Guide

Step 1

Heat the oil in a skillet and sauté the onion and garlic with oregano, a pinch of cumin, paprika, pepper, and salt until the onion is cooked.

Step 2

Add the meat in a single layer and fry until golden brown. Then, using a spatula, flip the meat and fry the other side.

Step 3

Once the meat is cooked, mix everything thoroughly to prevent the mixture from becoming watery. Allow the filling to cool and refrigerate until the next day.

Step 4

Blend the corn kernels in parts, adding a small amount of cream to each part, until a smooth puree with a soft texture is achieved. Cook the resulting puree in a saucepan over low heat, stirring constantly.

Step 5

When the puree thickens, remove from heat and stir in the beaten egg and clarified butter. Mix all ingredients thoroughly. Add basil and season with salt and pepper.

Step 6

Preheat the oven to 365°F. Grease a baking dish or 8 individual ramekins. Fill the dish with the 'pino' filling to 1/3 full. Layer with shredded chicken, add raisins, olives, and pieces of boiled egg. Cover with the corn mixture.

Step 7

You can sprinkle sugar on top, as in the original recipe. Leave in the oven for about 35 minutes or until golden brown. Serve immediately.
