Description
Instead of molasses, I used honey. I'm not sure how equivalent the substitution is, but it turned out delicious. I made half the ingredients, resulting in two large loaves. I think this is enough for a family of four. I did not use a glaze for the finished bread.
Ingredients
- Dry yeast 0 oz
- Light Molasses ½ cup
- Milk 4 cups
- Vegetable Oil 1 cup
- Sugar ½ cup
- Salt 3 teaspoons
- Ground Caraway 1 teaspoon
- Ground fennel seeds a pinch
- Star anise 1 teaspoon
- Orange zest 1 piece
- Coarsely Ground Rye Flour 2 cups
- Ground Oats 1 cup
- Wheat Flour 10 cups
- Water ¼ cup
Step-by-Step Guide
Step 1
Activate the yeast in the water.
Step 2
Mix in the molasses, according to desired sweetness, add milk, oil, sugar to taste, salt, spices, and zest. Add the yeast.
Step 3
Combine with the oat groats and rye flour, knead well.
Step 4
Gradually add as much plain flour as possible to form a thick dough.
Step 5
Place in a warm spot to rise.
Step 6
Sprinkle the top of the dough with approximately ¼ cup of plain flour. Knead the dough until it becomes smooth.
Step 7
Knead for another 5 to 10 minutes until it is not only smooth but also silky.
Step 8
Divide the dough into 4 equal parts. Shape them into round or oval forms.
Step 9
Let rise in a warm place for about 1 hour.
Step 10
Bake for 35 minutes at 375°F. Glaze the hot bread with warm molasses or syrup.
