Description

If your puff pastries 'unfold' during baking, next time when preparing the dough, reduce the amount of flour (the dough should be softer) and increase the 'overlap' of the corners when shaping the pastry.

The essence and flavor of these buns lies in their shaping. Roll out the prepared dough, which has risen twice, into a rectangular sheet using a rolling pin.

Spread half of the pastry crumbs evenly over the surface of the dough using your hand.

Fold the edges from both sides, bringing the dough together so that the crumbs are enclosed inside, with the edges overlapping each other.

Pressing down firmly on the rolling pin, literally pressing the crumbs into the dough, first roll it out along the length of the dough. Then, roll the dough out as wide as possible.

Again sprinkle with crumbs (half of the remaining crumbs), fold the dough in the same way (tucking it lengthwise, with the crumbs inside).

Cut the resulting roll in half. Roll each half out slightly into a strip, one at a time.

Cut each half of the dough into 4 pieces.

Roll each piece into a square shape.

Then transfer the loaf to a baking sheet lined with parchment paper, turning it crumb side up.

Form the remaining rolls in the same way. Allow the rolls to proof for 25-30 minutes. Meanwhile, preheat the oven to 430°F.

Place the baking tray in the oven and bake the rolls for 10-15 minutes. Once cooled, the finished rolls can be frozen by wrapping each one in plastic wrap.
