Ingredients
- Wheat Flour 20 oz
- Sugar 10 oz
- Chocolate eggs 3 pieces
- Salt to taste
- Milk 5 fl oz
- Butter 5 oz
- Lemon ½ piece
- Citrus Zest Mix to taste
- Cognac 5 oz
- Dry yeast 0 oz
- Marinated cherries 20 oz
- Plums 20 oz
- Red Currant 10 oz
- Black Currant Jam 5 oz
Step-by-Step Guide
Step 1
Dissolve the yeast in a small amount of warm milk with a pinch of salt and sugar, and mix with three tablespoons of flour. Pour the mixed yeast into a small saucepan or bowl, lightly sprinkle with flour, and place in a warm place for 15-20 minutes.
Step 2
Make a mound with 500 g of sifted flour, create a well in the center, and crack the eggs into it. Add salt, 25 g of sugar, and lemon zest grated on a fine grater. Pour in the yeast, mix well, and gradually add the slightly warmed milk and 125 g of melted butter to knead a soft dough. Then cover the dough with a towel and leave it in a warm place for 1 hour.
Step 3
Preheat the oven to 355°F.
Step 4
Place the dough in a greased and floured mold, put it in a warm place, and let it rise for 30 minutes.
Step 5
Bake until done.
Step 6
Remove the baked crust from the mold, cool it, carefully cut off the top, and hollow out the crumb with a knife so that the thickness of the walls and bottom does not exceed 1 cm. Save the removed crumb.
Step 7
Pit the cherries and plums, add the currants and sugar, and simmer. Add cognac and currant jam.
Step 8
Fill the pie with the filling mixed with the crumbled removed crumb.
