Summer Minestrone
Ingredients
- Olive Oil 2 tablespoons
- Onion 1 head
- Celery stalk 2 pieces
- Garlic 1 clove
- Canned White Asparagus 10 oz
- Chicken Broth 30 fl oz
- Fava Beans 10 oz
- Chinese green beans 10 oz
- Cream 5 fl oz
- Grated Pecorino Pepato Cheese 0 oz
- Pesto 4 tablespoons
Step-by-Step Guide
Step 1
Sauté the celery, onion, and garlic in olive oil.
Step 2
Pour chicken broth into the sautéed vegetables, bring to a boil, then simmer for another 15 minutes.
Step 3
Add green beans, fava beans, and finely chopped asparagus to the soup. Cover the pot and cook for 7 minutes.
Step 4
Once all the vegetables are cooked, add cream, pesto, and grated Parmesan.
