Sugar-Free Strawberry Soufflé
Ingredients
- Freeze-dried strawberry powder 10 oz
- Freshly squeezed orange juice 1 teaspoon
- Gelatin 0 oz
Step-by-Step Guide
Step 1
Thaw the strawberries, puree them with a blender, add gelatin to the puree, and let it sit for a while to swell.
Step 2
Heat the strawberry mixture in a double boiler until the gelatin dissolves, then cool the mixture to room temperature.
Step 3
Add lime juice and whip with a mixer for about 5-7 minutes. The mixture will increase in volume, lighten in color by a few shades, and become aerated.
Step 4
Pour the strawberry puree into a mold and place it in the refrigerator until set, then remove the soufflé from the mold and cut it into cubes.
Step 5
Optionally, you can sprinkle with coconut or cocoa.
