Stuffed Pattypans in Olive Oil

Ingredients

  • Pattypans 10 oz
  • Feta cheese 5 oz
  • Olive Oil 10 fl oz
  • Dried Rosemary ½ teaspoon
  • Ground Black Pepper to taste
  • Salt to taste

Step-by-Step Guide

Step 1

Prepare all the ingredients.

Step 2

Wash the small pattypans thoroughly and dry them.

Step 3

Cut off the tops of the pattypans and scoop out the insides using a spoon.

Step 4

Fill the pattypans with feta and replace the tops.

Step 5

Transfer the pattypans to a jar, add salt (be careful with the salt if the cheese is very salty), pepper, and oregano.

Step 6

Pour olive oil into the jar up to the brim and close with a lid.

Step 7

Place a kitchen towel at the bottom of a large pot and set the jar on top.

Step 8

Fill the pot with water up to the shoulders of the jar and place it over medium heat. When the water boils, reduce the heat and simmer for 20 minutes.

Step 9

Remove the jar from the boiling water using tongs or an oven mitt, allow it to cool completely, and then store it in a dark, cool place.
