Ingredients

- Vanilla cream for cake 0 oz
- Strawberry 0 oz
- Pistachios 0 oz
- Butter 5 oz
- Almond 0 oz
- Wheat Flour 10 oz
- Salt 0 oz
- Farm fresh eggs 2 pieces
- Powdered Sugar 5 oz
- Gelatin 0 oz
- Milk 10 fl oz
- Vanilla Pod 1 piece
- Sugar 0 oz
- Heavy cream 15 fl oz
Step-by-Step Guide
Step 1
Cream the butter with powdered sugar, add the eggs, then mix in the flour to form a dough.
Step 2
Chill in the refrigerator for 30 minutes, then roll out to a thickness of 3 mm and bake at 345°F for 7-10 minutes.
Step 3
Bring the milk with vanilla and glucose to a boil, then combine with melted chocolate and gelatin.
Step 4
Blend, strain, and refrigerate for 8-10 hours. Pour the cold cream into the ganache and slowly whip at low speed, then increase to high speed until a pattern forms.
Step 5
Spread melted white chocolate on the finished tartlet, pipe the vanilla cream, and decorate with strawberries and ground pistachios.
