Step-by-Step Guide

Step 1

In a bowl, combine 80 grams of sugar, flour, salt, and baking powder. Soften 100 grams of room-temperature butter with your hands and mix it until smooth with the flour mixture. Then add two egg yolks and knead into a soft, elastic dough — you can do this by hand or with a mixer.

Step 2

Divide the dough into five parts, roll each into a pancake about 3 mm thick, and place them in a baking dish approximately 10 cm in diameter. Place the dishes in a preheated oven at 375°F for fifteen minutes. Remove the finished tart shells from the oven and let them cool.

Step 3

Whisk together the mascarpone, sour cream, one egg, one yolk, 50 grams of sugar, and the zest of one lemon. Once the mixture is smooth, pour it into the tartlet shells and place them back in the oven — this time preheated to 300°F. After six minutes, remove them, let them cool, and put them in the refrigerator for about fifteen minutes.

Step 4

Meanwhile, prepare the whipped cream: whip the cream well with 30 grams of sugar and the contents of a vanilla pod.

Step 5

Slice the strawberries thinly. Once the tartlets have cooled, layer the berries on top of the cheese mixture in a tight arrangement, and serve with Chantilly cream, which can be drizzled over the strawberries and everything else to taste.
