
Strawberry Soup with Peppermint, Green Basil, and White Sparkling Wine

Description
This soup can be served as an aperitif or a digestif, and you could even base an entire meal on a hot summer day around a menu consisting of a couple of liters of this sparkling soup with a bright berry aroma. The sparkling wine—Prosecco, Champagne, or Cava—can be replaced with any drinkable Chardonnay or Riesling without bubbles. However, sparkling wine is preferred simply because it gives the soup a richer texture.
Ingredients
- Strawberry 15 oz
- Peppermint leaves 0 oz
- Fresh basil leaves 0 oz
- Sugar 0 oz
- Lemon 1 piece
- Lime 1 piece
- Dry Champagne 5 fl oz
Step-by-Step Guide
Step 1
Transfer the washed strawberries to a blender, removing the green leaves from each berry and discarding them. Pluck all the leaves from the mint and basil stems, but do not throw them away; instead, add them to the blender with the strawberries.
Step 2
Add granulated sugar and squeeze the juice of the lemon and lime into the bowl, making sure not to include any seeds with the juice.
Step 3
Pour all of this with sparkling wine and blend in pulse mode until smooth. Serve over ice.
