Strawberry Oatmeal Muffins
Ingredients
- Egg white 4 pieces
- Applesauce 5 oz
- Natural Yogurt 5 oz
- Oat flakes 5 oz
- Wheat Flour 5 oz
- Baking Powder 1 teaspoon
- Strawberry 0 oz
- Corn Starch 0 oz
- Sugar 5 oz
Step-by-Step Guide
Step 1
Whip the egg whites with a sweetener.
Step 2
Add applesauce, yogurt, flour, and baking powder. Mix well (you can use store-bought applesauce if it's unsweetened, or make your own by microwaving apples for 5 minutes and then blending them). The batter should be as thick as very thick sour cream.
Step 3
Chop the strawberries in a blender or, if you don't have one, finely dice them.
Step 4
Spoon the batter into muffin cups, filling them not to the top (it will rise). Place a bit of chopped strawberries in the center and sprinkle with cornstarch.
Step 5
Bake for half an hour in a preheated oven at 390°F.
