Strawberry Macaron
Ingredients
- Ground Almonds 10 oz
- Powdered Sugar 15 oz
- Egg white 5 oz
- Salt a pinch
- Red Food Coloring to taste
- 10% cream 15 fl oz
- Strawberry 5 oz
- Gelatin 1 piece
Step-by-Step Guide
Step 1
Soak the gelatin in cold water and let it swell.
Step 2
Heat the cream, mix in the strawberry puree combined with powdered sugar, add the gelatin, and refrigerate for 12 hours.
Step 3
Sift the powdered sugar and ground almonds, add 100 g of egg whites. Place the fine sugar in a separate saucepan and pour in 75 ml of water, heating until it reaches +118 °C.
Step 4
Whip the remaining egg whites with a pinch of salt until fluffy.
Step 5
Pour the hot syrup into the whipping egg whites. Combine with the almond mixture and add the pink food coloring.
Step 6
Pipe the macarons onto a parchment paper sheet, let them dry at room temperature for 1–2 hours. Preheat the oven to 160 °C and bake the macarons for 8–10 minutes.
Step 7
From a pastry bag, squeeze jelly cream onto one half, then place and slightly press the second half of the almond cookie on top.
