Strawberry in Champagne Jelly

Ingredients

  • Strawberry 10 oz
  • Sugar 5 oz
  • Demi-sec champagne 10 fl oz
  • Gelatin 0 oz
  • Meyer Lemon Juice 1 tablespoon

Step-by-Step Guide

Step 1

Soak the gelatin in room temperature water for 40 minutes. Heat the champagne with sugar and lemon juice to 175°F. Do not bring to a boil!

Step 2

Add the squeezed gelatin while stirring, allowing it to dissolve. Let the mixture cool.

Step 3

Place the strawberries in portioned molds, pour the jelly mixture over them, and refrigerate for at least 4 hours until fully set. Before serving, dip the molds with the set jelly into hot water for 3 seconds and invert onto serving plates.
