Ingredients
- 3.2% Milk 5 fl oz
- 30% Cream 5 fl oz
- Sugar 5 oz
- Salt a pinch
- Cornstarch 3 teaspoons
- Cream Cheese 0 oz
- Strawberries 5 oz
- Lemon Juice 2 tablespoons
- Strawberry Jam to taste
Step-by-Step Guide
Step 1
For the strawberry sauce, in a small saucepan over medium heat, combine the strawberries, half of the sugar, and lemon juice. Cook until the sugar dissolves and the syrup thickens, about 5 minutes. Remove from heat, let cool, and blend into a smooth sauce. Strain the sauce through a fine sieve.
Step 2
Dissolve the cornstarch in 50 ml of milk.
Step 3
For the ice cream, in a saucepan over medium heat, combine the remaining milk, cream, half of the sugar, and salt. Stir and bring the mixture almost to a boil. Add the cornstarch milk and cook the mixture, stirring constantly, until it thickens. Remove from heat, add the cream cheese and strawberry sauce, mix until smooth, and cool to room temperature, then refrigerate overnight.
Step 4
Freeze in the freezer according to the instructions. Once ready, transfer the ice cream to a container, layering it with strawberry jam (5-6 teaspoons). Place in the freezer for at least 5 hours before serving.
