
Strawberry-Grapefruit Sorbet

The sorbet recipe presented here is a wonderful low-calorie alternative to ice cream. Sweet, fragrant strawberries combined with tart grapefruit create a magnificent dessert with a very pleasant flavor. It includes a bit of vodka, making it a treat for an adult gathering. The strawberry and grapefruit sorbet turns out pink. For a yellow version, orange juice, basil leaves, and orange-flavored vodka are needed. The recipe for a white sorbet uses lemon juice and rosemary. Instead of 3 cups of fresh strawberries, you can use 330 grams of frozen ones.
Ingredients
- Sugar 1½ cups
- Water 1½ cups
- Vodka 3 tablespoons
- Grapefruits 2 pieces
- Strawberry 15 oz
- Meyer Lemon Juice 2 teaspoons
Step-by-Step Guide
Step 1
Carefully cut four strips of zest from the grapefruit peel (about 10 cm long and 2.5 cm wide), avoiding the white part of the peel. Squeeze 2 cups of juice from the grapefruits.
Step 2
In a saucepan, combine sugar and water. Stir occasionally until the sugar dissolves. Let the syrup simmer for 5 minutes. Remove the saucepan from heat.
Step 3
Make 1¼ cups of strawberry puree. In the warm sugar syrup, add the zest, grapefruit juice, strawberry puree, vodka, and lemon juice. Let it sit for a while (from 30 minutes to 1 hour, depending on how strong you want the grapefruit flavor to be).
Step 4
Place the grapefruit-strawberry sorbet in the refrigerator. Then strain and freeze in an ice cream maker. This is certainly easier. However, you can also make the sorbet in the freezer. For this, you need to stir the mixture every hour to prevent ice crystals from forming.
