Strawberry Gazpacho

Ingredients

  • Strawberry 5 lbs
  • Sugar 5 oz
  • Dry White Wine 5 fl oz
  • Passion Fruit 3 pieces
  • Nectarines 2 pieces
  • Raspberry leaves 10 oz
  • Fresh Mint 6 leaves

Step-by-Step Guide

Step 1

Wash the strawberries and remove the green stems. Set aside 200 grams. Puree the remaining strawberries with sugar. Strain the puree through a fine sieve and add the wine.

Step 2

Cut the passion fruits in half. Add the seeds to the strawberry puree.

Step 3

Finely chop the remaining strawberries and nectarines. Add them to the strawberry puree along with the raspberries. Cover and refrigerate until serving. Serve in soup bowls, garnished with mint leaves.
