When you're too lazy to go get cheese, it's always quicker to grab some cottage cheese.
Ingredients
- Butter 5 oz
- "Jubilee Cookies" 10 oz
- Cottage cheese 20 oz
- Sugar 5 oz
- 10% cream 15 fl oz
- Gelatin 0 oz
- Strawberry 5 oz
- Vanillin 1 tablespoon
- Fruit Jelly 5 oz
- Lemon 1 piece
Step-by-Step Guide
Step 1
To prepare the cheesecake base, blend the butter with the shortbread cookies in a food processor until you achieve a smooth mixture.
Step 2
Transfer the mixture into a round springform pan with a diameter of 26 cm (or any other size) and spread it evenly, pressing down to form a base. Place it in the refrigerator for one hour.
Step 3
Pour 50 ml of boiling water over the gelatin and let it cool slightly (or place it in a water bath, stirring, until completely dissolved). In a food processor, blend the cottage cheese until it forms a smooth, homogeneous mixture.
Step 4
Whip the resulting cottage cheese mixture, cream, and sugar with a mixer. Depending on your taste preferences, you can increase or decrease the amount of sugar.
Step 5
Add the pre-prepared gelatin, the juice of one lemon, and vanilla powder. Whisk well! Spread the mixture over the prepared base and refrigerate for one hour.
Step 6
Now, thinly slice the strawberries and cover the entire surface of the cheesecake with them, then pour strawberry jelly on top. After that, place the cheesecake in the refrigerator for an hour; it will be ready after one hour.
