Strawberry Cheesecake with Cookies
Ingredients
- Butter 5 oz
- Cookie 15 oz
- Brown Sugar 5 oz
- Mascarpone Cheese Unagrande 20 oz
- Farm fresh eggs 4 pieces
- Whipped Cream 10 fl oz
- Wheat Flour 2 tablespoons
- Ground Cinnamon 1 teaspoon
- Nutmeg ¼ teaspoon
- Vanilla extract 2 teaspoons
- Meyer Lemon Juice 1 tablespoon
- Strawberry to taste
Step-by-Step Guide
Step 1
Preheat the oven to 355°F.
Step 2
Grease the pie dish with butter.
Step 3
In a blender, crush the cookies into crumbs. Add the softened butter and blend for another 10 seconds. Transfer the mixture to the dish in an even layer and refrigerate for 1 hour.
Step 4
Beat the mascarpone with the sugar, add the eggs and cream, and beat for 4 minutes. Add the flour, cinnamon, nutmeg, lemon juice, and vanilla. Pour the mixture into the dish and bake for 1 hour without opening the oven.
Step 5
Turn off the heat and leave the pie in the oven for 2 hours.
Step 6
Then open the oven and leave for another hour.
Step 7
Remove and let cool overnight. Decorate with whipped cream, strawberries, and sprinkle with nutmeg.
