Description

The simplest and quickest version of cheesecake. Quick because it doesn't require baking, provided that you have already made the shortcrust base in advance.

Ingredients

  • Cake crumbs 5 oz
  • Butter 0 oz
  • Sugar 5 oz
  • 10% cream 10 fl oz
  • Philadelphia Cheese 10 oz
  • Vanilla Pod 1 piece
  • Strawberry 5 oz
  • Citrus Zest Mix 1 tablespoon

Dice 150 grams of strawberries into small cubes. Place the berries in a metal bowl, add an equal amount of sugar, and set over a water bath for one hour.

Mix the cookie crumbs by hand with warm butter and 50 grams of sugar.

Take Philadelphia cheese, cream, the insides of a vanilla pod, and the zest of half a lemon. Blend the mixture in a blender until it reaches a whipped cream-like consistency.

Spread the cheese mixture in an even layer, about one centimeter thick, in a bowl that is 10 centimeters high. Top with a layer of crumbs. Then add another layer of each. Finish with a third layer of cheese and refrigerate for at least two hours.

Strain the finished strawberry syrup through a sieve. Instead of cooked berries, use fresh ones, cut them into wedges, and stir them into the syrup.

Remove the cheesecake from the fridge. Scoop out a heaping tablespoon of cheesecake, place it on a plate, and garnish with berries in syrup.
