- Strawberry 15 oz
- Gelatin 0 oz
- Pistachios 0 oz
- Mascarpone Cheese Unagrande 10 oz
- Sugar 5 oz
- Cream 5 fl oz
- Powdered Sugar 3 teaspoons
- Cookie 24 pieces
Step-by-Step Guide
Step 1
Soak the gelatin. Make a puree from 300 grams of strawberries and mix it with cheese, pistachios, and sugar. Squeeze the gelatin and dissolve it in a saucepan over low heat. While pouring in a thin stream, mix the gelatin with the strawberry-mascarpone cream.
Step 2
Chop half of the remaining strawberries and fold them into the mixture. Line the bottom and sides of a 1-liter high mold with plastic wrap, fill it with a layer of cream about 1 cm thick, and arrange the cookies (preferably sponge cookies) around the edges. Fill the mold with the remaining cream and smooth it out. Leave to cool for 2 hours.
Step 3
Slice the remaining strawberries. Whip the cream. Invert the charlotte onto a plate, remove the plastic wrap, cover with cookies, and decorate with cream. Arrange the sliced strawberries around the edges and on top of the charlotte, and sprinkle with powdered sugar.
