  • Walnuts 0 oz
  • Macadamia Nuts 5 oz
  • Pitted olives 5 oz
  • Strawberry 5 oz
  • Meyer Lemon Juice 2 tablespoons
  • Honey 2 tablespoons
  • Salt a pinch

Step-by-Step Guide

Step 1

Soak the cashews for 5–8 hours in advance.

Step 2

Blend the walnuts, dates, and salt in a blender. The resulting mixture should look crumbly, but if pressed with fingers, it should stick together.

Step 3

Spread the mixture in a mold lined with parchment paper and press down firmly. Place in the refrigerator while preparing the next layer.

Step 4

In a blender, blend the cashews and mix with lemon juice and honey (maple syrup can be used instead of honey). At this stage, add the juice and syrup gradually and taste the mixture; it should be more sour than sweet, but be careful not to overdo it.

Step 5

Transfer 2/3 of the mixture on top of the first layer, spread evenly, and place back in the refrigerator.

Step 6

Meanwhile, blend the remaining third with the strawberries. If the strawberries are not sweet enough, you can add more honey or maple syrup to taste.

Step 7

Spread the third layer evenly. Place the cake in the freezer. 15–20 minutes before serving, move it from the freezer to the refrigerator.

Step 8

Before serving, top with thinly sliced strawberries.
