  • Farm fresh eggs 5 pieces
  • Wheat Flour 5 oz
  • Citrus Zest Mix 1 tablespoon
  • Cottage cheese 15 oz
  • Meyer Lemon Juice 2 tablespoons
  • Gelatin 0 oz
  • Orange juice concentrate 5 fl oz
  • 10% cream 5 fl oz
  • Strawberry 25 oz
  • Grapefruits 0 oz
  • Butter 0 oz

Step-by-Step Guide

Step 1

Preheat the oven to 355°F. Separate the egg whites from the yolks. Whip the egg whites with lemon juice. In a separate bowl, whip 150 grams of sugar, the yolks, and the zest. Add the flour to the yolk mixture, then fold in the egg whites. Grease the baking mold with butter. Pour in the batter and bake for 40 minutes. Allow the finished cake layer to cool and cut it into two parts.

Step 2

Mix the remaining sugar with the cottage cheese. Soak the gelatin and dissolve it in the orange juice. Place it in the refrigerator for 1 hour. Whip the cream.

Step 3

Mix half of the whipped cream with the cottage cheese and spread the mixture on the cake layers. Cut the strawberries in half, place half of the berries on one layer, and cover with the second layer. Use the remaining whipped cream to frost the sides of the cake. Top with strawberries and grapes and drizzle with the glaze from the refrigerator.
