I made meringues using this recipe http://eda.ru/desserts/recipe23719/merengi-beze. 1 egg white and 50 g of sugar were enough to decorate the entire cake. The egg white was leftover from the shortcrust pastry. However, for those who want to do the same, I recommend placing them on the cake just before serving, as they will completely soften and lose their magical airy taste. The flavor is very delicate, with a bright taste of banana, strawberry, and cottage cheese. Delicious and healthy! I absolutely loved it, I will make it again!

Ingredients

  • Wheat Flour 5 oz
  • Butter 0 oz
  • Whole egg 1 piece
  • Powdered Sugar 0 oz
  • Honey 1 tablespoon
  • Cottage cheese 15 oz
  • Bananas 2 pieces
  • Strawberry 5 oz
  • Gelatin 0 oz
  • Sugar 5 oz
  • Milk 5 fl oz

Step-by-Step Guide

Step 1

Prepare the shortcrust pastry for the base. Sift the flour and cut it with the butter, add powdered sugar or sugar. Add the yolk, honey, and knead into a firm dough.

Step 2

Roll out the dough and lay it in the mold, stretching it up the sides. Prick it with a fork so it doesn't puff up. Bake for 10–15 minutes in a preheated oven at 355°F (it will turn a nice beige color).

Step 3

Meanwhile, soak the gelatin in 150–200 ml of boiled cold water, leave to swell for 30 minutes. After half an hour, heat the gelatin over low heat until the granules dissolve completely, divide into 2 parts.

Step 4

In a blender, mix and whip the bananas, half of the milk, half of the cottage cheese, and half of the sugar. It should form a homogeneous cottage cheese mixture. Pour in the slightly cooled gelatin, mix, and immediately pour the mixture into the mold with the base. Chill the cheesecake in the refrigerator.

Step 5

Now make the strawberry layer in the same way. Blend half of the strawberries (I used frozen, crushed ones) with the remaining cottage cheese, sugar, and milk. Also pour in almost all of the gelatin (leave a tablespoon for later), mix, and pour into the mold over the banana layer.

Step 6

Make the final thin layer for decoration. Mix the remaining strawberries with a tablespoon of gelatin, add sugar to taste. If the top layer of the cake has set, evenly distribute the strawberries over the surface of the cake.

Step 7

Wait for it to set completely.
